In addition to my promotion, I was selected as one
of the opening team of Silversea’s new vessel, The Silver Spirit. This period
of time has been one of the most grueling and yet rewarding times of my life.
My duties were broad and sometimes irrelevant to my actual position due to the
enormity of preparing a new ship for service. Most of the contract was spent
streamlining the service in the first Japanese restaurant onboard in our fleet.
I learn how to greet and serve Japanese customers as well as food names in the
language.

choice because it broadened my food knowledge and offered better internal

utilites for deep cleaning.

My work onboard was very intensive and
exhilarating. I was involved in the beverage aspect of the F&B Dept which
began from coffee to gluehwein and cocktails to wine. This position picked up
the slack for the Sommeliers; we were trained to present and recommend a
suitable house wine (or beverage alternative) to an individual’s meal and
particular preference in taste.

I worked at Café Vacca Matta whilst on holiday
between my 2nd and 3rd years of studies. I was required
to serve guests both beverages and cigars. In addition to this, I also aided
the other bar staff and ensured stock was always at par in the bar. Being one
of Durban’s most popular night clubs, I was always able to keep a professional
attitude and appearance whilst serving a non-stop crowd.

RFL: This job coincided with my final year of
college and it was my decision to resign so that I could focus on my studies.

I was selected as one of the three IHS 2nd year
students accepted to the Hilton Durban after a number of interviews, in order
to gain practical experience under their guidance and supervision. My time in
Front Office was spent as a Receptionist except for my final month I was asked
to assist up in the VIP Check-In. In Housekeeping, my initial position was
helping to co-ordinate room requirements but after a few weeks I was moved up
to a Room Supervisor.

I am currently studying towards my second Advanced Diploma - Professional Cookery Management. I am due to write my final exams in late October.
